Every Sunday we have a little ritual where we gather at the table and make Chai. We make a big batch (without the milk and honey) and keep this concentrate in the fridge. Every morning we simply add hot milk and honey to the concentrate and enjoy the most delicious, warming drink you can imagine. Yum!
Here is our recipe:
24 cardamom pods
4 3 inch cinnamon sticks
3 tsp whole black peppercorns
3 tsp whole cloves
1 tsp fennel seeds (more if you like them, 1 tsp is enough for us)
1 tsp anise seeds (again, add more if you like them)
3 inch piece fresh, peeled ginger
5 bags black tea
Crush the cardamom, peppercorns, cloves, fennel and anise seeds in a pestle and mortar. I have a 6 year old helper that loves doing this bit. The spices don't have to be finely ground, just well bruised. Put all ingredients into a pot, add boiling water or bring to boil and let it simmer for five minutes. We usually leave it for a while afterwards (at least 10 minutes but it's up to you) and then strain it through a muslin (or clean cloth napkin) and store in a jar in the fridge until you want to use it.
When you want a super duper winter warmer cup of Chai, pour a quarter of a cup of the concentrate into a cup, add hot milk and honey to taste. Experiment and add/exclude ingredients as per your liking. I have tried and enjoyed allspice, vanilla and orange but always go back to the recipe above. All the ingredients we use are organic. If you buy the spices in bulk the price is greatly reduced. This drink is so delicious and really good for you too. I am sure consuming all those spices is part of why we stay healthy all winter.
